The Science

Most food brands ask for trust. We would rather hand you the paperwork.

NUDE is one ingredient: the whole cacao bean, stone-ground into a 200g scored bar. Because there is nothing else in the box, everything worth knowing about the bar is measurable. So we measure it, every batch, at an independent laboratory, and we publish what comes back.

The category's science, on the record

Cacao is one of the most studied plants in food. Researchers have studied cocoa flavanols for decades, and polyphenols are the antioxidant compounds cacao is known for. Cacao was valued as medicine long before it was candy: drunk whole, unsweetened, the way it is prepared from this bar. Non-alkalized cacao, like NUDE, preserves more of the bean's naturally occurring flavanols than Dutched cocoa.

We do not attach promises to any of this. The science belongs to cacao as a category; the numbers below belong to this bar.

What one 20g piece measures

  • 890mg total polyphenols (GAE)*
  • ~156mg theobromine, cacao's signature compound
  • ~51mg caffeine
  • 58mg magnesium (15% DV, a good source)
  • 3.4g fibre
  • 100 kcal

*Total polyphenols by batch analysis, measured as gallic acid equivalents (GAE); naturally occurring levels vary by batch.

Screened, every batch

  • Screened pesticide residues: not detected
  • Glyphosate and glufosinate: not detected
  • Aflatoxins and Ochratoxin A: not detected
  • Salmonella: negative
  • Heavy metals: third-party tested every batch

Every batch is numbered, and its results stay tied to it. Batch 002 will be tested the same way, and its numbers will be its own.
